Ingredients
· 1 cup butter, softened
· 1 cup white sugar
· 1 cup packed brown sugar
· 2 eggs
· 1 tsp vanilla extract
· 2 cups flour
· 1 tsp baking soda
· 1 tsp salt
· 1 ½ tsp cinnamon
· 3 cups quick oats
Directions
1. In a medium bowl, cream butter and sugars.
2. Beat in 1 egg at a time.
3. Stir in vanilla.
4. In a small bowl combine flour, baking soda, salt, and cinnamon.
5. Combine both mixtures and oats.
6. Cover and chill for at least one hour.
7. Grease cookie sheet, roll walnut size balls, place 2 inches apart.
8. Flatten with fork dipped in sugar.
9. Bake at 375 for 8-10 minutes.
10. They will come out looking doughy and thick, but will settle after a few minutes.
