Ingredients
12.9 oz wild rice (I use three 4.3 oz boxes of Rice-A-Roni long grain and wild rice, the seasoning packets help add more flavor)
2 lbs ground turkey
2 tsp minced garlic
1 onion (yellow or sweet)
1-2 bell peppers (yellow, orange, or red)
3 sweet potatoes
salt and pepper to taste
1.5-2 cups shredded extra sharp cheddar cheese
Directions
Add the turkey and garlic to a large skillet. Break it up and brown it for about 5 minutes.
In a separate pot follow the rice instructions to cook.
Add diced onions and diced bell pepper to the skillet. Cook until onions are soft.
Add bite-size sweet potatoes, salt, and pepper to the skillet. Cover skillet and cook for about 15 minutes until potatoes are soft.
Mix in cheese to skillet.
Mix in rice to skillet.
