Butternut Squash Soup


Ingredients

  • Frozen butternut squash

  • 1 stalk celery

  • 1 large carrot

  • 2 medium potatoes

  • 1 medium onion

  • salt and pepper

  • 2 tbsp butter

  • 32 oz chicken or vegetable stock

Directions

  1. Chop ingredients and add everything to a large stock pot.

  2. Bring to a boil and then let simmer for 40 minutes or until everything is tender.

  3. Move to a glass bowl and blend using and immersion blender.
