Garlic Roasted Mashed Potatoes



Ingredients

  • 1 head of garlic

  • 1 tsp olive oil

  • 1/2 cup (one stick) butter, cut into cubes

  • 2.5 lbs red potatoes

  • 1 cup heavy cream

  • kosher salt and pepper


Directions

  1. Preheat oven to 400°F. Cut the top off the head of garlic to expose the cloves. Place on a square of aluminum foil, drizzle with oil, salt, and pepper. Wrap tightly and roast for 40 minutes.

  2. Chop potatoes, place in stock pot and cover with water. Add 2 tbsp of kosher salt. Bring to a boil and then lower the heat to simmer for 15-20 minutes. Strain potatoes.

  3. Put cooked potatoes into stand mixer bowl, add butter, cream, mashed roasted garlic, 1 tbsp kosher salt, and dash of pepper.

  4. Serve immediately.
