Ingredients
1 head of garlic
1 tsp olive oil
1/2 cup (one stick) butter, cut into cubes
2.5 lbs red potatoes
1 cup heavy cream
kosher salt and pepper
Directions
Preheat oven to 400°F. Cut the top off the head of garlic to expose the cloves. Place on a square of aluminum foil, drizzle with oil, salt, and pepper. Wrap tightly and roast for 40 minutes.
Chop potatoes, place in stock pot and cover with water. Add 2 tbsp of kosher salt. Bring to a boil and then lower the heat to simmer for 15-20 minutes. Strain potatoes.
Put cooked potatoes into stand mixer bowl, add butter, cream, mashed roasted garlic, 1 tbsp kosher salt, and dash of pepper.
Serve immediately.
