Cajun Dirty Orzo

Ingredients

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1 onion , finely diced

  • 3 green bell peppers , finely diced

  • 3 garlic cloves , minced

  • 1 tbsp Cajun seasoning

  • 1.5 tsp celery salt, or garlic salt

  • 1.5 tsp garlic & herb seasoning , or garlic powder

  • 2 tsp dried parsley

  • ½ tsp salt

  • 1.5 lb ground pork

  • 16 oz orzo pasta

  • 2 tbsp tomato paste

  • 32 oz beef stock


Directions

  1. Heat the butter and oil in a pan and add the onions, chopped pepper. Sauté over medium-low heat for five minutes. Stir in the minced garlic and seasonings.

  2. Turn up the heat slightly and add the pork, breaking it up with the back of a wooden spoon so that it starts to brown.

  3. Add the orzo and continue to stir until the pork is nicely browned and orzo is a bit toasted.

  4. Stir in the tomato paste and finally the beef broth. Bring to a rolling boil then lower the heat to a simmer. Cook, stirring occasionally, until the orzo is cooked, about 15 minutes.

  5. Turn the heat off and stir in the grated cheese so that it melts into the dish. Taste and adjust the seasoning if needed. Garnish with fresh thyme.
