Pineapple Chicken and Rice

Ingredients

  • 1 lb chicken thighs, diced raw

  • 1 tablespoon oil

  • Salt and pepper to taste

  • 3 cups rice

  • 1 cup pineapple chunks

  • 1/2 cup pineapple juice

  • 1/4 cup soy sauce

  • 1 tablespoon honey

  • 1 tablespoon brown sugar

  • 1 tablespoon cornstarch

  • 2 cloves garlic, minced


Directions

  1. Cook the chicken: Heat oil in a large skillet. Season chicken with salt and pepper and cook until golden and cooked through. Remove and set aside.

  2. Make the sauce: In a bowl, whisk pineapple juice, soy sauce, honey, cornstarch, garlic, and ginger.

  3. Combine: Add pineapple chunks to the skillet, then pour in the sauce. Simmer until thickened.

  4. Add chicken back: Return chicken to the pan and toss until coated in sauce.

  5. Serve: Spoon over warm rice and garnish as desired.
