Pineapple Chicken and Rice

Ingredients
1 lb chicken thighs, diced raw
1 tablespoon oil
Salt and pepper to taste
3 cups rice
1 cup pineapple chunks
1/2 cup pineapple juice
1/4 cup soy sauce
1 tablespoon honey
1 tablespoon brown sugar
1 tablespoon cornstarch
2 cloves garlic, minced
Directions
Cook the chicken: Heat oil in a large skillet. Season chicken with salt and pepper and cook until golden and cooked through. Remove and set aside.
Make the sauce: In a bowl, whisk pineapple juice, soy sauce, honey, cornstarch, garlic, and ginger.
Combine: Add pineapple chunks to the skillet, then pour in the sauce. Simmer until thickened.
Add chicken back: Return chicken to the pan and toss until coated in sauce.
Serve: Spoon over warm rice and garnish as desired.
