Ingredients
· 4 chicken breast, cooked
· 2 tbsp taco seasoning
· 1.5 cups shredded cheese
· 20 oz red enchilada sauce
· *2/3 cup milk
· *8 oz green chilis
· *1/2 tsp red pepper
· *28 oz cream-style corn
· *2 eggs
· *17 oz Jiffy corn muffin mix
Directions
1. Preheat oven to 400
2. Combine * ingredients and 1 tbsp taco seasoning in a large bowl, stir, then pour into 9x13 pan coated with cooking spray.
3. Bake for 20-30 minutes
4. Toss chicken in 1 tbsp taco seasoning
5. Pierce surface of pie liberally with a fork
6. Pour enchilada sauce over
7. Top with cheese and chicken
8. Bake 15 minutes, let stand 5 minutes
