Saucy Pork Burrito Bowls

Ingredients
3 cup jasmine rice
12 Roma tomatoes
3 yellow onion
4 tbsp lime juice or two limes
32 oz ground pork (or beef or turkey)
1.5 cups sour cream
1 red bell pepper
3 tbsp tex-mex seasoning (or taco seasoning)
3 poblano pepper - optional
Directions
Dice tomatoes and mince 1 onion. In a large bowl, combine tomato, minced onion, and lime juice, and season with salt.
Finely chop red bell pepper. Into blender or food processor, add red bell pepper, sour cream, and tex-mex seasoning, and blend until thoroughly mixed.
Set the rice to cook.
Cut 2 onions into wedges. Dice poblano into 1/2 inch pieces.
Heat a drizzle of oil in a large pan over medium-high heat. Add poblano and onion wedges. Season with salt. Cook, stirring occasionally, until softened and lightly charred, 7-9 minutes. Transfer to a plate.
Heat oil in the same pan, add meat and a pinch of salt (may also use onion powder and garlic powder and extra tex-mex seasoning). Cook until browned, 4-6 minutes.
Add tex-mex crema to meat and 1/3 cup of water. Bring to a simmer and cook 1-2 minutes.
Serve rice, topped with sauteed veggies, saucy meat, and cold tomato salsa.
