Ingredients
· 6-8 tilapia fillets
· 8-10 oz fresh spinach
· 3 tbsp butter, sliced
· 1-2 c Monterey jack
· Brown rice
Sauce:
· ½ cup mayo
· ½ c grated parmesan
· 2 cloves garlic
· ½ c sour cream
· 1 tsp old bay
· ½ tsp adobo
· ¼ tsp pepper
· ¼ salt
Directions
1. Set rice to boil on the stove.
2. Pack spinach onto the bottom of a baking dish. Top with butter slices and layer the fish fillets over the top.
3. Then, combine the sauce ingredients and evenly spread over the top of the casserole.
4. Sprinkle with cheese and bake at 500 degrees F for 10 minutes.
