White Chicken Chili

Chicken in a Snow Storm

Tripling this recipe will completely fill a 7 quart crockpot to the brim.
Ingredients
· 2 chicken breasts
· 1 cup diced onion
· 2 garlic cloves
· 1 can black beans (rinsed)
· 1 can corn (undrained)
· 1 can Rotel (undrained)
· 1 eight oz cream cheese
· 1 package ranch dressing mix
· 1 tsp cumin
· 1 tbsp chili powder
· 1 tsp onion powder
· ¼ tsp cayenne
· ½ tsp garlic powder
· ½ tsp pepper
Optional
· Brown rice
· Shredded cheddar cheese
· Bite size tortilla chips
Directions
1. In large skillet-heat oil and cook onions 5 minutes.
2. Add garlic and cook for 1 minute.
3. Set crockpot to low, with chicken on bottom add all ingredients, save cream cheese for later.
4. Cook 5 hours on low.
5. Cook rice.
6. Take chicken out of crock pot. Add cream cheese into pot to begin melting. Shred chicken then return to chili and stir. Let sit for another 30 minutes.
7. Layer with rice and top with cheese. Eat with scoops.
